Select good mackerel, one that the brine has not been allowed to get strong on and so taint the fish, soak 1/2 hour in cold water, then put on the stove in cold water and allow to come to a boil in two waters. Let boil a couple of minutes in the last water, then turn out on a plate and drain off well. Take fresh butter, brown it and pour it over the fish. Serve hot.
