Whites of 10 eggs, 1 1/4 cups of sugar, 1 cup of flour sifted 3 times, 1 level teaspoonful of cream of tartar. Add the cream of tartar to the eggs when half beaten, add a pinch of salt, beat until very stiff, put in the sugar and flour, stirring lightly. Put in an ungreased cake pan and bake from 35 to 50 minutes in a moderate oven.
