Select perfect, round and well-matured sweet apples. Take 1/2 pint of vinegar, 1 pint of sugar, 1 pint of water, and place in an earthen or agate vessel. Boil for 10 or 15 minutes, then add 3 drops each of cinnamon and clove oil, and drop in the apples. Boil until the apples are soft through. Cinnamon bark and whole cloves can be used in place of the oil, as preferred. If vinegar or oil is not strong, use enough to season.
