For 2 quarts of green beans, put 1/2 cup of butter and lard into a kettle: when very hot, add 1 tablespoonful, of flour. Brown well, then add 1 cup of water, and then the beans. Stir well, cover with water, and when tender, cook dry.

Prepare the beans for cooking, scald them in boiling water, let them remain in the water until it becomes lukewarm; then put them on to cook with meat. Add salt and a little sugar.
