A carb loaded pancake recipe that I use before long mountain bike rides.
I've found that I get the best sustained energy and performance with this pancake recipe.
If your going to race, you can carb load the night before with a pasta dinner. Also make sure that you eat this breakfast at least 2 hours before your activity or race. (If it's not digested, you'll feel sick on the trails!)
