Greetings! Tonight I tried a new recipe and decided to share it with you. This is truly a meal in a hurry! Italian Ramen Skillet is a one pan meal that uses things you may already have in your pantry and fridge and gives a great alternative for using the ramen noodles. Here is what you will need to make this dish:
1 pound lean ground beef
½ cup sliced pepperoni (about 25 slices)
1 14 ounce can of Italian seasoned tomatoes
1 6 ounce can sliced mushrooms drained
1 cup water
1 beef bullion cube (you can use the seasoning packet from one beef ramen but I dont like that and thought that the bullion cube would add better flavor)
2 packets of regular ramen (discard the seasoning packets)
¼ cup parmesan cheese
1 cup shredded mozzarella cheese
Brown ground beef in large skillet and add pepperoni, continue to brown until the pepperoni looks wilted. Place bullion cube in glass measuring cup with water and heat in microwave for 1 minute just to break up the cube. Add into pan along with tomatoes, mushrooms and seasonings to taste. Stir well to combine. Break each ramen noodle brick in half and add all of them to the pan. Cover and simmer on medium for about 5 to 7 minutes, stirring occasionally to break up noodles. Turn off heat and sprinkle parmesan cheese over top of noodle mixture and top with shredded mozzarella cheese, cover and allow cheese to melt. Serve along side a tossed salad and some garlic bread.
