120 Slow Cooker Recipe Favorites
by Mary Engelbreit
My daughter put this recipe together originally with just the pork, applesauce, and soy sauce, but I was making it one day and did not have enough applesauce, so I substituted the juice.
Cheryl Goode-MacKinnon; Dearborn, Michigan
Makes 6 to 8 servings
INGREDIENTS
• 1 (3-pound) pork loin or about 6 pork chops, preferably thick
• 2 tablespoons oil (optional)
• 1 (24-ounce) jar applesauce
• 2 to 3 cups apple juice
• 1/4 to 1/3 cup soy sauce
• 1 to 2 tablespoons brown sugar
• 1 tablespoon butter
DIRECTIONS
For best full flavor, brown the pork in the oil in a skillet over medium-high heat. If you don't have time, you can skip this step.
Put the pork in a 5-quart slow cooker Mix the apple- sauce, apple juice, and soy sauce to taste in a bowl. Pour over the meat, cover, and cook on low for 6 to 8 hours. About three-quarters of the way through the cooking, add the brown sugar to taste and butter on top of the meat.
Serve with rice and veggies. This is even better the following day.
