Freshman in the Kitchen

Tilapia is a very common saltwater fish with a mild taste. It readily accepts the flavors that you cook it in creating a perfectly seasoned dish. It grills, bakes and broils brilliantly.
Serves 2
Total time 30 minutes
Ingredients
• 2 eggs
• 2 (6 ounce) tilapia filets
• 1 cup Italian breadcrumbs or Homemade Breadcrumbs
• 2 tablespoons Herb Butter
• 1 teaspoon mayonnaise
• 1 tablespoons lemon juice
• 3 tablespoons blended oil (1/2 olive oil 1/2 canola oil)
Directions
1. Lightly beat the eggs.
2. Bread the tilapia by dipping m egg, then coating well with breadcrumbs.
3. Melt the Herb Butter in a small skillet or microwave. Let cool slightly, then mix in mayonnaise and lemon juice and set aside. The lemon juice may not dissolve into the butter and that's ok.
4. Heat a nonstick skillet to medium-high and then add oil. Gently place the tilapia in the pan and fry until golden brown on one side, about 2-3 minutes. Carefully flip and cook on the other side until golden brown and cooked through
5. Serve with the lemon-herb butter-mayonnaise mix and Rice Pilaf.
