Indonesian (Ketam Masak Pedas)
Favourite Dishes from the Tunku's Kitchen

Serves 4-6
Ingredients
Cooking oil - 50 ml
Shallots - 6, peeled and finely pounded
Chilli paste - 4 Tbsp
Tamarind pulp (asam jawa) - 30 g, mixed with 100 ml water, squeezed and strained
Crabs - 4, cleaned and halved
Salt - to taste
Sugar - to taste
Rice - 2 Tbsp, roasted and finely ground
Directions
• Heat cooking oil in a wok.
• Combine finely pounded shallots and chilli paste.
• Stir-fry shallots and chilli paste until the oil surfaces.
• Pour in tamarind juice, stir and bring to a boil.
• Add crabs, salt and sugar to taste.
• Finally, add in roasted and finely ground rice.
• Cook until gravy thickens and is almost dry.
• Transfer onto a plate and serve.
