NEUFCHATEL CHEESE

Neufchatel is a mild flavored, soft, unripened cow's milk cheese similar to cream cheese, but with a lower fat content and more moisture.  Originally from the town of Neufchatel in the Normandy region of France. The fat content is usually about 45%. Sold in various shapes - small rectangles, cylindrical, heart shapes, etc.
