· In everyday usage, a nut is an edible kernel which is inside a hard shell.
· Botanically, a nut is a one seeded fruit enclosed in a woody or leathery covering called the pericarp. A true nut does not split open when ripe, and its kernel is in one piece.
• Acorns, hazelnuts, beechnuts and chestnuts are true nuts in the botanical sense.
• Walnuts, almonds, cashews, hickory nuts, pecans, pistachios and coconuts are drupes, like the stones of peaches.
• Brazil nuts, Macadamia nuts and pine nuts are seeds.
• Peanuts are legume seeds.
There are 1.86 million acres of tree nuts in the United States. (2007)
When green nuts are harvested they contain about 50% or more water content, and must be dried to some degree for proper storage. The fat content of nuts varies from 70% in Macadamia nuts to about 4% in dried chestnuts.
