The Dutch oven is a large heavy pot, usually made of cast iron, with a tight fitting lid to facilitate long slow cooking. Some types have 3 legs, and some have concave lids so hot coals can be place on top for uniform heat, top and bottom.
In 2001 the Dutch Oven was designated as the official State Cooking Vessel of Arkansas. It is also the State Cooking Pot of Utah (1997).
The Cast Iron Dutch Oven was designated as the Official Cooking Implement of Texas in 2005.
