Herbed Flounder

Prep Time: 5 Minutes
Cooking Time: 3-4 Hours
Ideal Slow Cooker Size: 6-Quart Oval
Ingredients
• 2 lbs. flounder fillets, fresh or frozen
• ½ tsp. salt
• ¾ cup chicken broth
• 2 Tbsp. lemon juice
• 2 Tbsp. dried chives
• 2 Tbsp. dried minced onion
• ½ - 1 tsp. leaf marjoram
• 4 Tbsp. chopped fresh parsley
Directions
1. Wipe fish as dry as possible. Cut fish into portions to fit slow cooker.
2. Sprinkle with salt.
3. Combine broth and lemon juice. Stir in remaining ingredients.
4. Place a meat rack in the slow cooker. Lay fish on rack. Pour liquid mixture over each portion.
5. Cover. Cook on High 3-4 hours.

Per Serving: 160 calories (20 calories from fat), 2.5g total fat (0.5 saturated, 0g trans), 75mg cholesterol, 2590mg sodium, 5g total carbohydrate (0.5g fiber, 2g sugar), 29g protein, 8% DV vitamin A, 10% DV vitamin C, 6% DV calcium, 4% DV iron.
