JERK SPICED SHRIMP

Jerk Spiced Shrimp

 

INGREDIENTS:

    · 1 Tablespoon ground allspice
    · 1 Teaspoon basil, minced
    · 1 Teaspoon ground nutmeg
    · 1 Teaspoon ground cinnamon
    · 1 Tablespoon dried thyme
    · 1 Teaspoon cayenne pepper
    · 1 Tablespoon light brown sugar
    · 1 Tablespoon salt
    · 1 Teaspoon freshly ground pepper
    · 1/4 Cup olive oil
    · 1/4 Cup soy sauce
    · 3/4 Cup apple cider vinegar
    · 1/2 Cup freshly squeezed orange juice
    · 2 Tablespoons freshly squeezed lime juice
    · 2 Habanero peppers, minced
    · 1 Small white onion, minced
    · 3 Scallions, thinly sliced
    · 2 Pounds shrimp, peeled and deveined
     

DIRECTIONS:

1. Prepare the grill or broiler.

2. For sauce:
Combine allspice, basil, nutmeg, cinnamon, thyme, cayenne pepper, brown sugar, salt and pepper.
Mix well.
Slowly whisk in the oil, soy sauce, vinegar, orange juice and lime juice.
Stir in the peppers, onions and scallions and mix thoroughly.
Simmer for about 10 minutes over medium heat.

3. Sprinkle shrimp with salt and pepper and grill or broil until done.
Toss shrimp with the sauce and serve immediately.
