INGREDIENTS
Lobster Cakes--Step One
1 cup Lobster; cooked & diced
Lobster Cakes--Step Two
1/4 cup Celery; diced
1/4 cup Onions; diced
1/4 cup Red peppers; diced
1/4 ts Garlic; minced
1/4 ts Jalapenos; diced
Lobster Cakes--Step Three
1/4 ts Thyme; fresh
1/4 ts Parsley; chopped
2 tb Sour cream
1/2 cup Bread crumbs; white
Salt; to taste
CILANTRO & TOMATO COULIS
2 tb Shallots
1 ts Garlic; minced
1 tb Butter
1 ts Sugar
1 cup Tomato juice
1/4 cup Cilantro; chopped
to taste Salt & pepper
DIRECTIONS
[1) Poach Lobster and dice.
[2) Saute ingredients in STEP TWO.....
[3) Combine Sauteed Vegetables, Lobster and STEP THREE ingredients
and mix well
[4) Make into cakes, and cook for 2-3 minutes on each side.
Serve on sauce.
SAUCE.
Saute Shallots, Garlic and Sugar in Butter for 3 minutes
Add tomato juice and heat. Removed from heat and add cilantro, salt and pepper to taste.
