Yield: 6 servings.
Ingredients
• 2 pounds skinless Florida mahi-mahi fillets*
• 1/4 cup lemon juice
• 2 tablespoons Italian salad dressing
• 2 cups crushed potato chips
• 1/2 cup grated Parmesan cheese
• 1/4 cup chopped Florida parsley
• 1½ teaspoons paprika
• 1/2 teaspoon thyme
• 2 tablespoons vegetable oil
Directions
Cut fish into serving-size portions.
Combine lemon juice and salad dressing.
In a separate bowl combine potato chips, Parmesan cheese, parsley, paprika, and thyme.
Dip fish in lemon juice mixture and roll in potato chip mixture.
Place fish in a lightly-oiled baking dish and drizzle with oil.
Bake at 500 degrees F for 10-12 minutes or until fish flakes easily with a fork.
*Seafood alternatives: flounder, grouper, swordfish
