Makes 8 servings
Prep. Time: 20 minutes
Cooking Time: 7-9 minutes
Ingredients
• 2 large parsnips, cooked until soft
• 2 egg whites, lightly beaten
• 3 tsp. fresh chopped parsley, or 1 tsp. dried parsley flakes
• 2 tsp. fresh lemon juice
• 1/2 tsp. lemon zest
• 1/2 tsp. dried dill weed
• 1/4 tsp. pepper
• 2 6-oz. cans water-packed tuna, drained
• 1½ Tbsp. olive oil
Directions
1. Mash parsnips.
2. In a bowl, combine all ingredients except olive oil.
3. Form into 8 burgers.
4. Cook in olive oil over medium heat in a large skillet until lightly browned on one side, about 4-5 minutes.
5. Flip burgers. Continue cooking until browned on the other side, about 3-4 minutes.
