SAUSAGE & DRIED PLUM RAGU WITH PASTA

Cook/Bake Time: 25 Minutes
Servings: 6


Ingredients

• 1 pound lean Italian turkey sausage
• 2 cans (14 1/2 ounces each) diced tomatoes, undrained
• 1 cup (about 6 ounces) coarsely chopped pitted dried plums
• 1 medium onion, chopped
• 2 tablespoons chopped fresh basil or 1 tablespoon dried basil
• 2 cloves garlic, finely chopped
• 1/2 teaspoon salt
• 6 cups hot cooked penne pasta


Preparation
Remove casings from sausage.

In large nonstick skillet, brown sausage over medium heat 7 to 10 minutes or until no longer pink, breaking up into crumbles; pour off dripping.

Return sausage to skillet.

Add tomatoes, dried plums, onion, basil, garlic and salt; bring to a boil.

Reduce heat to low.

Cover; simmer 14 to 16 minutes, stirring occasionally.

Serve over pasta.
