Yield: approximately 15 cakes
Ingredients
· 4 tablespoons butter
· 1 small onion, chopped small
· 1/2 red pepper, chopped small
· 1 teaspoon garlic, minced
· 1 - 2 jalapeno pepper(s), chopped fine
· 1 pound Florida shrimp, pureed
· 2 Florida eggs
· 3 - 4 cups breadcrumbs
· 1 Florida papaya, peeled , seeded, chopped
· salt and pepper to taste
· 2 teaspoons Florida lime juice
· 2 teaspoons dijon mustard
· 1 tbsp. fresh cilantro or parsley, chopped
· 1/2 cup flour
Directions
Step One
Saute onion, red pepper, garlic and jalapeno in 2 tablespoons of butter.
Remove from heat and cool slightly.
Step Two
In a bowl, mix together eggs, onion mixture, shrimp and next six
ingredients. Form mixture into patties, approximately 3 inches across and 1
inch thick. Put flour on plate and lightly coat patties with flour.
Step Three
Melt remaining 2 tablespoons butter in skillet and fry patties over medium
heat 3 - 4 minutes on each side, or until golden and crispy. Serve hot.
