Gary Null's Power Foods: The 15 Best Foods for Your Health

Makes 2 Servings.
Ingredients
• 3 Idaho potatoes, baked, halved, with centers taken out and skins set aside
• 1 tablespoon fresh fennel, chopped
• 2 tablespoons fresh mint, chopped
• 1 cup soybeans, mashed
• 1/2 teaspoon paprika
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper, freshly ground
• 1 cup shiitake mushrooms
• 2 cloves garlic
• 2-3 tablespoons olive oil
• dash cayenne pepper
Directions
1. Preheat oven to 425°F.
2. In a large bowl, mash potatoes, fennel, mint, soybeans, paprika, salt, pepper, shiitake mushrooms, garlic, olive oil, and cayenne.
3. Stuff the mixture back into the potato skins. Bake for 10 minutes.
4. Serve immediately.
