MUSTARD MARINATED RABBIT

Rabbit is very similar in flavor to chicken, but the meat is much leaner.
Prep Time: 10 mins
Grill Time: 15 mins
Serves 4

 

Ingredients

    • 1 rabbit, about 4 pounds, cut into 4 equal pieces
    • 1/2 cup Dijon mustard
    • 1/2 cup extra-virgin olive oil
    • 2 tablespoons orange juice concentrate
    • 2 tablespoons minced onion
    • 1 teaspoon fresh thyme leaves
    • 1 teaspoon chopped fresh rosemary needles
    • Salt and pepper
     

Directions

1. Place the rabbit in a glass baking dish. Whisk together the mustard, oil, orange juice concentrate, onion, thyme, and rosemary in a small bowl until smooth. Season with salt and pepper to taste. Pour over the rabbit, tossing to coat well. Cover and refrigerate 1 hour.

2. Preheat and oil the grill.

3. Remove the rabbit from the marinade and scrape off any excess marinade. Reserve the marinade. Grill the rabbit over direct medium-high heat, turning occasionally and brushing with the reserved marinade, 10 minutes, or until marked. Cover and grill, turning occasionally, 5 minutes more or until cooked through. Serve hot.
