ROCK SHRIMP DREAMS

4 servings
 

INGREDIENTS

    • 1/2 pound cooked, peeled and deveined Florida rock shrimp
    • 6 ounces soft cream cheese
    • 1/2 cup chopped Florida pecans
    • 1/2 cup drained, crushed pineapple
    • 1/4 cup chopped ripe olives
    • 1 tablespoon Florida lime juice
    • 6 slices, white bread
    • 6 slices, wheat bread
    • butter
     

DIRECTIONS

Chop rock shrimp.

Combine all ingredients except bread and butter; mix well.

Lightly butter bread.

Spread equal amounts of shrimp mixture on 6 slices of white bread; cover with remaining slices of wheat bread and cut each sandwich into four pieces diagonally.
