Yield: 4 servings.
INGREDIENTS
• 1½ pounds Florida shark fillets
• 1/3 cup vegetable oil
• 3½ tablespoons Florida orange juice
• 4 teaspoons grated Florida orange peel
• 1¼ cups finely crushed bacon-flavored crackers
• 1 teaspoon paprika
• 1/2 teaspoon seasoned salt
• Florida orange slices (garnish)
DIRECTIONS
Cut fish into serving-size portions.
Combine oil, juice, and orange peel.
In a separate dish, mix crackers, paprika, and salt.
Dip fish in oil mixture and roll in cracker mixture.
Place fish, single layer, in lightly-oiled, 1½-quart shallow baking dish.
Pour remaining oil mixture over fish.
Bake at 450 degrees F for 10-12 minutes or until fish flakes easily with a fork.
Garnish with orange slices.
