The Rice Diet Solution

This shrimp dish is quick and simple but packed with lemony flavor. It's also excellent over rice, risotto, or polenta.
Yield: 4 servings
Ingredients
• 7 ounces pasta
• 1 teaspoon extra virgin olive oil
• 8 ounces shrimp, large (31-35) cleaned & shelled
• 4 garlic cloves, sliced thinly
• 1 teaspoon black pepper
• 1/4 cup white wine
• 1/4 cup lemon juice, fresh
• 1 tablespoon fresh parsley, chopped
Directions
Cook pasta according to directions on package.
Heat olive oil in large fry pan and add shrimp, garlic, and pepper.
Saute until shrimp curls.
Remove from heat, add wine, and place back on heat.
Simmer for 1 to 2 minutes.
Cover pan and place on high heat. Wait 1 minute.
Remove cover, stir well, plate, and top with lemon juice and fresh parsley.
