Divine Kosher Cuisine: Catering to Family and Friends

This is As You Like It's most popular brisket recipe. The slow cooking produces a rich fragrant gravy.
Yield: 12 Servings
Ingredients
• 3 large onions, chopped
• 10 garlic cloves, minced
• 5½ pounds beef brisket
• Salt, pepper and paprika to taste
• 1¼ cups French salad dressing
• 1 1/4 cups ketchup
• 2/3 cup dry red wine
• 1¼ cups water
• 2 pounds mushrooms, quartered, optional
Directions
1. Preheat oven to 375°F. Prepare ungreased large roasting pan.
2. Add two-thirds of the onions and garlic to pan. Rub meat with salt, pepper and paprika and place fat side up in pan. Cover with remaining onions and garlic.
3. Combine dressing, ketchup, wine and water and pour over meat. Cover.
4. Roast 2½ hours. Add mushrooms and cook 30 minutes, until meat is fork tender. Add additional water if liquid evaporates.
5. Cool, slice and return to pan. Chill overnight to skim fat from gravy.
