Fix-it And Enjoy-it Cookbook

Makes 6-8 servings
Prep Time: 25 minutes
Baking Time: 25 minutes
Ingredients
• 6 medium-sized potatoes, cooked soft
• 2 tsp. chives
• 1 cup sour cream
• 1 stick (1/4 Ib.) butter, at room temperature
• 1 cup grated cheese of your choice
• 1/4 tsp. dill weed
• 1-2 tsp. salt, according to your taste preference
• 1/4 tsp. pepper
• 10-oz. box frozen chopped spinach, thawed and squeezed dry
Directions
1. Mash all ingredients together except spinach.
2. When thoroughly blended, stir in spinach until well distributed.
3. Place in greased casserole dish and bake for 25 minutes, uncovered, at 350°.
Variation: Instead of 1 cup grated cheese, use 8-oz. pkg. cream cheese at room temperature.
