STUFFED PRAWNS

Yield: 8 servings
 

INGREDIENTS

         40    Shrimp, U-15

    MARINADE
         6 tb Red wine vinegar
         1 c  Olive oil
       1/2 ts Salt

    STUFFING
         2 tb Garlic; minced
         1 ts Salt
       1/4 c  Jalapenos; shredded
         1 c  Coriander; lightly packed
         6    Scallions; stalks, trimmed
     

DIRECTIONS

  [1) Peel & devein shrimp and butterfly for stuffing.
 
  [2) Marinate Shrimp for 15 minutes.
 
  [3) Add stuffing ingredients to food processor.
     Process until finely minced.
 
  [4) Stuff shrimp and grill or broil.
     Serve with Lemon slices for garnish.
