THAI MARINATED CHICKEN STRIPS

Entertaining with Bluegrass Winners Cookbook

Serves 8 To 10

Ingredients

• 2 pounds medium-sized chicken breasts

Marinade
• 1 cup crunchy peanut butter
• 1/4 cup brown sugar
• 1/3 cup cilantro, chopped
• 1/2 cup soy sauce
• 1/2 cup chili sauce
• 8 scallions, chopped
• 1 tablespoon salt
• 3 tablespoons garlic, chopped
• 1/2 teaspoon freshly ground black pepper
• 1/4 cup lime juice
• 15-20 small wooden skewers, soaked in water
 

Directions

• Thoroughly combine marinade ingredients.

• Trim chicken breasts into strips.

• Coat chicken with marinade and refrigerate for at least 3 hours or overnight.

• Thread chicken strips onto small prepared skewers.

• Grill for 6 minutes on each side.

• May be served hot or cold.
