QUESTION
Hi James,
I have purchased a jar of mild taco sauce with an expiration date of August 26, 2012 - does this mean that this sauce will be good until then if I open it today, October 4, 2011?
I have always wondered what an expiration date means if I cannot keep the food until then after I open it.

ANSWER
Hello Jenny,
The expiration date on food means the food is good until that date as long as it is not opened.
Once opened, most cans or jars of food are good for 3 to 10 days, depending on the food.
(Foods with a high vinegar content will last for much longer. Ketchup, pickles, mustard, etc. all have high vinegar content, and will last for many months.)
