Sesame oil comes in two forms, plain (or cold pressed) and toasted (or roasted).
Plain sesame oil is made from the raw sees and does not have very much aroma, color or flavor. It also has a high smoke point. Its neutral flavor and high smoke point make this a good oil for sauteeing
Plain (or cold pressed) sesame oil will keep for about 6 months at room temperature.
Toasted or roasted sesame oil is made from toasted sesame seeds and has a deep brown color with a rich aroma and nutty flavor.
This oil should be stored in the refrigerator to avoid spoilage.
Toasted sesame oil is excellent in cold sauces and vinaigrettes. It should not be used as a cooking oil, but a teaspoon or two is frequently added to stir-fried foods once the pan has been removed from the heat.
