QUESTION: I am looking for 2 cookie dough recipes that can be made and then refrigerated/froze and then I can take out and bake only the amount I want to make each time. Some one suggested just using any recipe I like, but I would hate to waste all the ingredients if it did not work. 1. Chocolate chip cookie dough 2. Peanut butter cookie dough Jerry
ANSWER: Hello Jerry, You can refrigerate pretty much any cookie dough for about 3 days or freeze them for about a month. (the main exception would be cookies with a very thin batter). Form into 'logs' so you can thaw the amount you need easily. Be sure to wrap them with plastic wrap and then put in a freezer bag so the dough doesn't pick up any freezer odors. You can cut and use the dough frozen without thawing too. Chef James

WALNUT CATSUP Put the walnuts in salt for a week. Crush in a mortar and cover with hot vinegar and let stand a week.
Strain through a colander and allow for each quart: 1/2 ounce black pepper, 1 ounce ginger, 1/2 ounce cloves, 1 nutmeg, 1 teaspoon celery seed tied in a bag, 1 teaspoon allspice, 1 pinch cayenne pepper and boil for 2 hours.
Bottle white hot.

The easiest and best way to pick the freshest grapes in your local market is to hold a bunch by the stem. Shake gently - if grapes drop off the stem, they have been in storage for too long. If the grapes are firmly attached, are plump and bright, they are fresh.
