<><><><><><><><><><><><><><><><><><><><><><>< ><><><><><><> RECIPE MORAVIAN CHRISTMAS COOKIES 1/2 cup brown sugar, firmly packed 3/4 tsp baking soda 1/2 tsp salt 3/4 tsp ginger 3/4 tsp cloves 1/4 tsp nutmeg 3/4 tsp cinnamon 1/4 tsp allspice
1 cup molasses 1/2 cup shortening 4 cups sifted all-purpose flour
Sift together the brown sugar, baking soda, salt and all the spices. Heat molasses just to the boiling point but DO NOT BOIL. Stir in the shortening until absolutely smooth. Cool slightly, then beat in the sugar-spice mixture. Now knead in the flour with your hands until dough holds together. Shape into a big ball and chill in the refrigerator until firm. This dough will keep for weeks so you can bake as many cookies as you want at a time. Break off pieces of the dough and roll paper-thin on a lightly floured board. Cut into circles, place on a greased cookie sheet, and bake 6 to 8 minutes in a preheated 375 degree oven. Makes about 10 dozen. STONE CRAB SEASON IS HERE - (Oct 15 to May 15) Sweet, delicious Stone Crab claws are served every night at Blue Heaven. Stone crabs (Menippe mercenaria) are found along the Atlantic coast of the southern U.S. mainly around the Gulf Coast of Florida and the Florida Keys. They cannot swim, and live mostly on shallow flats in high salinity areas near oyster reefs. Even though they possess great strength and can crack the shell of a large oyster, they have a mild disposition and can be taken by hand. Only the claw meat is eaten, and only one claw is removed from the crab. They are then put back into the sea so the claw can regrow. The shell of the claw is 'stone hard' and must be cracked with a hammer. Stone crabmeat is firm in texture and has a sweet succulent flavor, similar to lobster.
^^^^^^^^^*********************************************** *******^^^^^ ^^^ ^ CHRISTMAS FOOD TRIVIA STARGAZY PIE This is a fish pie of Cornish origin. It is made with the fishes' heads sticking out of the crust all round the rim, and presumably takes its name from their appearance of gazing skywards. In her Observer Guide to British Cookery (1984) Jane Grigson notes that "it is a speciality of Mousehole where they make it on 23 December every year, Tom Bawcock's Eve, in memory of the fisherman who saved the town from a hungry Christmas one stormy winter".
