BANANA SALAD
Remove one section of skin from each of four bananas. Take out fruit, scrape, and cut fruit from one banana in thin slices, fruit from the other three bananas in one-half inch cubes. Marinate cubes with French Dressing. Refill skins and garnish each with slices of banana. Stack around a mound of lettuce leaves.

Pecan Pesto: Use Pesto recipe and substitute pecans for pine nuts, or use Pecan Pesto recipe on Blue Heaven website http://www.blueheavenkw.com

Remove the ends of the egg plant then with a very sharp knife then thinly (1/8 inch) slice the egg plant long ways. Lay paper towels on a sheet pan then lay the egg plant out on top of the paper, then sprinkle evenly with fine salt (about the amount you would use if you were to be generously seasoning them). You will need to leave them for 30 minutes for the moisture to be absorbed into the paper towel, sponge excess water off top of vegetables with paper towel. The purpose of putting the salt on them whilst on the paper, is that the salt will pull out what water is contained in the eggplant and the paper will absorb the excess moisture.
Repeat this process with the Zucchini exactly as done with the eggplant.
Heat grill on a high flame, when it is smoking hot you are able to grill the eggplant and zucchini. Brush the eggplant on both sides and lay on the hot grill (it is important that both sides get attractive sear marks from the grill, so do not turn more than necessary and ensure the grill is super hot). Allow to cool.
On a clean bench surface lay a large sheet of aluminum foil out (about the size of our large sheet pans). Sprinkle with water, this will help the glad wrap stick which you lay onto the aluminum foil.
Now lay the eggplant down on the glad wrap evenly so there are no gaps. Once the eggplant is covering the glad wrap place the zucchini on top, once again allowing no gaps. Now place a line of roasted peppers down the center (long ways). Now evenly spread the Pecan pesto 1/4 of an inch thick over the whole area except leaving a 2-inch gap from the side furthermost from you. Now roll away from you towards the furthermost side where there is no pesto, removing the glad wrap and aluminum foil as you go.
Chill before serving. Serve on bed of lettuce with orange vinaigrette.
NOTE: When grilling the eggplant and zucchini the purpose is not to cook right through, only to sear with good black lines from the grill.
