 NEWS ABOUT BEER
 Germans are losing their taste for beer. Beer consumption is
down by 20% over the last 20 years, and fell another 2% in the
first quarter of 2001. In the 1980s Germans drank 150 liters,per
capita, now that figure is down to below 125 liters. Brewers are
coming up with some new (and weird) combinations, such as beer
mixed with cola, tequila, fruit juices, etc. But, for Germans
who want to drink their share, there are still over 5,000 brands
of beer to choose from.

 NEWS ABOUT LOBSTER
Florida Lobster season starts tommorrow! So fresh lobster should
be available daily, starting tommorrow evening at Blue Heaven and
other Florida restaurants. Eggs Benedict with lobster is a great
way to start the day.

 TRIVIA
Camel was considered an ulclean meat in the Bible, but was
hightly regarded in Ancient Rome, where grilled camel's feet
was a gourmet dish. Both Aristotle and Aristophanes mention it.
Young camel is eaten in some North African and Middle Eastern
countries, and in Mongolia. During the siege of Paris in 1870,
it was listed on the Voison restaurant's Christmas Eve menu.

 ANCIENT & CLASSIC RECIPES

HACHÉE SAUCE
An ancient sauce for roast venison or red meat.
(Carême's Recipe)
"Put 2 tablespoons (3 tablespoons) vinegar into a saucepan. 
Add 1 level tablespoon chopped mushrooms, half this quantity of
parsley, 2 chopped shallots, a little garlic, a fragment of
thyme and bay leaf, 2 cloves, a generous pinch of white pepper,
and a little grated nutmeg. 
Cook this seasoning over a low heat.  Remove the thyme, bay
leaf, and cloves and add 2 tablespoons (3 tablespoons)
consommé and 2 tablespoons (3 tablespoons) espagnole sauce. 
Boil down to reduce and transfer to a bain-marie. 
Just before serving, stir in a small piece of anchovy butter,
2 small gherkins chopped very finely, and some capers."

 RECIPE REQUESTS FROM READERS

Title: Flank Steak with Cilantro Sauce
      Yield: 3 servings
 
-------MARINADE FOR FLANK STEAK
  1 1/2 lb Flank Steak
      2    Garlic; cloves; sliced
      2 tb Olive oil
    1/2 c  Red wine

-------CILANTRO SAUCE-------
      1 c  Cilantro; coarsly chopped
    1/3 c  Olive oil
      1 tb Red onions; very fine mince
           Salt & pepper

--------FOR SERVICE--------
      2    Loaves of fresh Flatbread
 
[1) Combine ingredients for marinade and marinate Flank Steak
overnight.
[2) Combine all ingredients for Sauce and let sit at room
temperature for 30 minutes.
[3) Grill Flank Steak, turning once. About 10 minutes for rare.
[4) For service, slice diagonally, and arrange overlapping
slices on warm Flatbread.      Drizzle with the Cilantro sauce.
