Yield: Makes 24 muffins
2 Cups All-Purpose Flour
2 Tsp. Baking Soda
1 1/2 Tsp. Cinnamon
1/2 Tsp. Allspice
1/2 Tsp. Nutmeg
1/2 Tsp. Salt
1 1/4 Cups Florida Brown Sugar
3 Florida Eggs (Beaten)
1 Cup Florida Milk
1 Cup Vegetable Oil
1/2 Tsp. Vanilla
1 1/2 cups Grated Florida Zucchini
1 1/2 Cups Grated Florida Carrot
1/2 Cup Chopped Florida Pecans
Method:
Sift together flour, baking soda, and spices into a large bowl.
In a separate bowl, whisk together sugar, eggs, milk and oil.
Combine all ingredients until just moistened.
Divide batter into greased muffin cups.
Bake in a 375 degree oven for approximately 18-20 minutes.
