Take 3 pounds of Hamburg steak and 1 onion chopped fine; add 1 large cup of bread crumbs, 1 cup of milk, 1 egg; season with salt and pepper and a little thyme (or whatever flavor is desired); make up into a loaf and bake l hour; baste frequently.

Take 2 pounds of finely-ground beefsteak, 1 or 2 beaten eggs, 3 soda or 6 small crackers rolled fine, salt and pepper. Mix thoroughly, form into a loaf, put into pan with a little hot water and small bits of butter, cover and bake 1 hour. Before quite done remove cover and let brown.

Take 2 pounds of raw beef and 1/2 pound of pork chopped fine and thoroughly mixed, 1 cup of cracker crumbs (rolled), 2 well-beaten eggs, 1 cup of sweet milk, piece of butter the size of a walnut, add salt and pepper. Mix and bake 2 hours.
