Makes 4 servings.
1 cup finely chopped apples
1/4 cup chopped onion
4 Tbsp. butter or margarine
1/4 cup flour
2 1/2 cups milk
2/3 cup apple cider
2 cups shredded sharp cheddar cheese
1/4 tsp. salt
1/2 tsp. nutmeg
In saucepan cook onion and apples in butter until tender.
Add flour and blend until smooth.
Stir in milk and cider.
Cook over medium heat, stirring constantly until mixture thickens.
Add cheese and seasonings.
Stir as the cheese melts.
Serve with a dash of nutmeg.
