Makes six 2-cup servings.
SALAD
2 cups sliced apples
1/2 cup thinly sliced celery
1/4 cup sliced green onions
8 cups torn salad greens
1 cup sliced fresh strawberries
1 package (9 oz.) refrigerated cheese-filled tortellini
APPLE JUICE DRESSING
1 Tbsp. Apple cider vinegar
1/2 tsp. lemon pepper
3 Tbsp. frozen apple juice concentrate, thawed
2 Tbsp. pine nuts, toasted, optional
2 Tbsp. chutney
2 tsp. dijon mustard
Combine all dressing ingredients. Cover dressing and refrigerate.
Cook tortellini according to package directions.
Drain and cool thoroughly.
In large mixing bowl combine tortellini and salad ingredients.
Toss gently with apple juice dressing and serve immediately.
