Yield: Makes 6 servings.
Ingredients
• 2½ to 3 pounds frying chicken, cut up
• 1 teaspoon seasoned salt
• 1/4 teaspoon ground black pepper
• 3/4 cup sliced onion
• 1/4 cup butter or margarine
• 1¼ cups apple juice
• 1/4 cup brandy
• 1 cup half and half
• 3 cups hot cooked rice
• 1/4 cup chopped fresh parsley for garnish (optional)
Directions
Sprinkle chicken pieces with salt and pepper. Cook chicken and onion in butter in large skillet until brown. Drain excess fat.
Pour brandy and apple juice over chicken; cover and simmer 25 minutes. Stir in half and half; continue cooking until sauce has thickened.
Arrange chicken on serving platter and surround with cooked rice. Pour sauce on top. Garnish with parsley, if desired.
