Ingredients
• 6 pounds pork spareribs
• 1½ cups (about 9 ounces) pitted dried plums
• 1½ cups water
• 1 cup sliced onion
• 2 cloves garlic
• 1 teaspoon salt
• 1/4 teaspoon ground ginger
• 1/4 teaspoon pepper
• 2½ tablespoons cider vinegar
• 1 tablespoon honey
Preparation
Heat oven to 350°F.
Place ribs on rack in shallow roasting pan.
Bake 1 hour.
Meanwhile, in medium saucepan, combine dried plums, water, onion, garlic, salt, ginger and pepper; bring to a boil.
Reduce heat to low; simmer 15 minutes or until dried plums are soft, stirring occasionally.
Transfer dried plum mixture to food processor; process until smooth.
Stir in vinegar and honey.
Generously spread dried plum mixture over ribs to coat top surface.
Cook ribs an additional 30 minutes or until tender.
To serve, cut between ribs.
