Mix snipped fresh chives or chopped green onion into prepared mashed potatoes.
Place 1/3 cup potato mixture in an individual microwave-safe custard cup, forming a well in the center.
Crack one egg into well.
Sprinkle with favorite shredded cheese.
Microwave on high for 1 to 2 minutes or until egg is cooked to desired doneness.
