OLIVE RICE BALLS

Yield: Makes approximately 2 dozen rice balls.

• 1 1/2 cups cooked rice
• 1/2 cup shredded Cheddar cheese
• 1/4 cup sliced green onions
• 1/4 cup finely chopped ripe olives
• 1/4 cup Italian-style bread crumbs
• 1/4 teaspoon salt
• 1 egg, beaten
• 1 teaspoon lemon juice
• 1/8 teaspoon hot pepper sauce
• paprika for garnish

 
Combine rice, Cheddar cheese, onions, olives, bread crumbs, salt, egg lemon juice and pepper sauce in large mixing bowl.

Shape mixture into 1-inch balls; place on well-greased baking sheet.

Bake at 375 degrees 10 to 15 minutes.

Serve warm.
