This is an attractive, change-of-pace dish that reheats without losing flavor or texture.
Dairy Or Pareve
Yield: 4 To 6 Servings
Ingredients
• 1 pound parsnips, peeled
• 1/4 cup dried apricots
• 1/4 cup sugar to taste
• 1/4 cup orange juice
• 1 tablespoon butter for dairy (use margarine for pareve)
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
Directions
1. Cut parsnips into 1/4-inch diagonal slices.
2. Cover parsnips and apricots with water in saucepan. Bring to boil, reduce heat, cover and simmer until tender. Drain and return to saucepan.
3. Add remaining ingredients, bring to boil and remove.
