Here's a good breakfast dish that can stand alone or become the filling for a hearty omelet. Use hard winter apples such as Idared or Red Rome that hold their shape during cooking.
Makes 4 servings.
Ingredients
• 1 tablespoon olive oil
• 2 cups finely diced cooked ham or roast pork
• 2 large cooking apples, peeled, cored, and diced
• scant 1/4 cup apple cider, or 1/4 cup apple butter, apple jelly, or applesauce
• cinnamon, to taste
Directions
Heat the oil in a large, heavy skillet.
Sear the meat until well browned.
Reduce the heat, add the apples, and saute over moderate heat until lightly browned.
Pour the cider over the ham
