Serves 4
1/4 cup sugar
1 pound green beans, trimmed
1 quart water, boiling
2 tablespoons olive oil
2 tablespoons bacon, fried, crumbled
Pepper to taste
Heat heavy saucepan over medium-high heat; add sugar and stir just until melted.
Add green beans and boiling water; cover and boil for six minutes.
Drain; plunge beans into ice water.
Drain. Heat the olive oil in a large skillet, add beans, cook just until through.
Stir in bacon; season to taste.
Fresh green beans have never tasted better. Serve along side with your favorite grilled chops or ham dinner.
