I just love this recipe! I always have teh ingredients in my pantry.
You can use canned or leftover chicken or veggies or use spicy beans or tomatoes (and skip the hot sauce) - whatever you have on hand.
Makes 6 to 8 servings
INGREDIENTS
• 2 cups cooked shredded or chopped chicken meat
• 1 (15-ounce) can corn, drained
• 1 (15-ounce) can navy beans, drained and rinsed
• 1 (15-ounce) can seasoned diced tomatoes, such as Del Monte's Green Pepper and Onion, or your favorite flavor
• 1 (10-ounce) can condensed cream of mushroom soup
• 1 (4-ounce) can sliced mushrooms, drained
• 1 (14-ounce) can chicken broth (not condensed)
• Hot sauce
DIRECTIONS
Combine all the ingredients, including hot sauce to taste, in a 4-quart slow cooker, cover, and cook on low for 6 to 8 hours or high for 2 to 3 hours.
