• Grain-fed Ground Buffalo (Bison) contains about 12% fat.
• Range-fed Buffalo contains a maximum of 10% fat.
Each pound of cooked buffalo will provide about four 3-ounce servings.
Buffalo may be substituted in any recipe calling for beef.
Buffalo will cook faster than beef because there is less fat.
The key to cooking buffalo meat properly is to cook it slowly on low heat.

• Bison is a source of protein, niacin, vitamins B6 and B12, iron, phosphorus, potassium, and zinc as well as other vitamins and minerals.
