Capers are usually packed in brine, but may also be found salted. The should be rinsed before using to remove excess salt.
Capers have an intense tart, pungent, lemony flavor.
1 pound of capers = about 2 2/3 cups
1 cup = 6 oz
1 TB = 3/8 oz
