How to avoid Cracks when baking a Cheesecake:
Overbeating the filling for a cheesecake beats too much air into the mixture which causes the eggs to expand in the oven and then deflate during cooling - causing cracks in the cheesecake.
Use a food processor to mix the ingredients rather than a mixer to avoid this.
When you remove the cheesecake from the oven, run a thin knife around the inside of the pan to release the cheesecake from the sides of the pan.
If left clinging to the sides of the pan, as the cheesecake cools and contracts the strain can cause cracks.
