The Amish Cook at Home:

This is a favorite in some Amish. homes around here. Our children like brownies or any kind of bars, so these seem to go over well in our home!
Makes 40 bars
Ingredients
~ 2½ cups all-purpose flour
~ 1 cup whole-wheat flour
~ 2 teaspoons baking soda
~ 1½ teaspoons salt
~ 2 teaspoons ground cinnamon
~ 2 cups sugar
~ 1 cup vegetable oil
~ 4 eggs, beaten
~ 2/3 cup water
~ 2 cups peeled and grated zucchini
~ 1 (12-ounce) package chocolate chips
~ 1 (12-ounce) package butterscotch chips
~ 1 cup chopped walnuts (optional)
Directions
Preheat the oven to 350°F.
Grease two 9 by 13-inch baking pans or one 12 by 17-inch baking pan.
Combine the flours, baking soda, salt, cinnamon, and sugar in a large bowl and stir with a whisk to blend. Add the oil, eggs, and water and stir until smooth. Stir in all the remaining ingredients. Stir for about 5 minutes until everything is very evenly blended.
Then pour the batter into the prepared pan(s).
Bake for 35 minutes, or until firm.
Remove from the oven, let cool, and cut into squares.
